Laesâ is the historical spelling of the Swabian word "Leisa" and means lentils. It stands for our region like hardly any other product and symbolizes what we represent with our cuisine: The authenticity of often inconspicuous but honest ingredients that arouse emotions.

For us, returning to the origins of the word ‘lentil’ is a tribute to the culinary and emotional roots of where we work and symbolises the essence of our work: quality products and classic craftsmanship, coupled with a love of artistic detail – sometimes provocative and reinterpreted.

For us as a team and our head chef Denis Jahn, LAES is above all a place where tradition and history form a symbiosis with innovation and our own style. With a focus on the essentials, we stand for uncompromising quality standards, taste and emotion.

DENIS JAHN

 

The kitchen style is characterized by his time in two of the most famous German restaurants. After his training, Denis Jahn learnt the basics of French high cuisine in the early years of the Vendôme in Bensberg and in the Schwarzwaldstube under Harald Wohlfahrt. He then returned to the Vendôme, where he worked alongside Joachim Wissler for over a decade as sous chef and later head chef.
